The Many Types of Corn

The next time you drive past a cornfield, instead of just assuming that these ears of corn will someday, appear on a dinner table, just remember that there are many different types of corn, each with specific properties.  The most commonly grown type is known as dent corn, primarily from the appearance of the kernels, which have a sort of dimple, caused by the drying and shrinking of the starch. In addition, there are sweet corn varieties, as well as flint, popcorn and flour corn.  Each has unique characteristics, ideal growing climates, and purposes, from sources of grain, food for cattle, to the cobs that will one day sit on a dinner table.
